The MICHELIN Guide Hong Kong Macau is the 26th guide in the MICHELIN guide collection, and the China the 23rd country covered.

Michelin has launched the second edition of its bilingual food guide in several comfort and price categories. The list includes 245 establishments in Hong Kong, of which 205 are restaurants and 40 are hotels, and 53 establishments are in Macau (38 restaurants and 15 hotels).

The bilingual second edition, in English and Traditional Chinese, included three restaurants awarded three stars, nine with two stars and 39 one star establishments.

In Hong Kong and Macau, as in the 22 other countries covered by the MICHELIN guide, a consistent selection is ensured by awarding stars based on the same criteria: product quality, preparation and flavours, the chef’s personality as revealed through his or her cuisine, value for money, and consistency over time and across the entire menu. These criteria are appropriate for all types of cooking, including Chinese (for example, noodles, dim sum, Cantonese dishes).

Although the MICHELIN guide is known around the world for its celebrated stars, these restaurants account for just 10% of the selection. The MICHELIN guide has always built its success on the diversity of its selection and especially on establishments offering a high-quality dining experience at an affordable price, of which the best receive the Bib Gourmand distinction . The MICHELIN Guide Hong Kong Macau 2011 includes 50 Bib Gourmand restaurants (45 in Hong Kong and five in Macau), which offer a full three-course meal for HK$300 or less.

Hong Kong is well known for their simple and local food stalls, which have led the MICHELIN guide to create the simple shop pictogram. In the second edition of the guide, a total of 29 simple shop restaurants are included (there are 11 restaurants in 2009), which is 15% of the total current Hong Kong selection. Some of the starred restaurants are simple shops serving local food, making them the most affordable starred restaurants in the world. Diners can enjoy gourmet meals for as little as HK$50 per person, showing MICHELIN guide’s commitment to local eateries. Also, the MICHELIN Guide Hong Kong Macau 2011 has expanded the covered areas to locations like San Po Kong, Sham Shui Po, Sham Tseng, Shatin and Yuen Long.

The MICHELIN guide has a rigorous selection process that is applied independently and consistently around the world. The selection is prepared by anonymous inspectors, who are experienced hospitality industry professionals. In this year’s guide, more than 60% of the restaurants selected offer Chinese cuisine (Shanghainese, Pekingnese, Sichuan, Cantonese, Chiu Chow, etc.).
